Chaya is a plant that is native to the Yucatan. It grows in the form of a bush;
the leaves are edible and can be used much like spinach. Using this plant as
our company name is to represent the freshness of food that grows wild without
the use of chemicals. Along with the fact that it grows in Chef Garcia's native
Mexico!
The food we strive to serve is as natural as possible. Chef Garcia wants to serve the same quality of food in the restaurant as he would serve to his own family and friends.
- The TORTILLAS served at brunch are hand made upon ordering. Making a perfect tortilla is an art, not just anyone can do it!
- The COFFEE we serve is organic, shade grown, certified free trade. It is roasted especially for La Chaya Bistro by Alakef Coffee of Duluth, MN.
- The BACON is from Fischer Family Farms Pork in Waseca, MN. They produce all natural pork products that are hormone and growth stimulant free.
- The CHORIZO is made right at La Chaya. Our Chorizo is a Mexican Style chorizo that is ground (instead of chunks of meat like in Europe), spiced and smoked. The pork used in the Chorizo also comes from Fischer Family Farms Pork.
- All SAUCES/SALSAS are made daily at La Chaya. Everything is made fresh and from natural ingredients.
- The DAIRY & EGGS used are organic.
- The PASTA is made by hand at La Chaya daily with organic ingredients.
- The MEATS served are all hormone free and/or organic.
- Chef Garcia chooses the freshest FRUITS and VEGETABLES. He supports local farmers as much as possible. He changes the menu according to what is readily available during the different seasons. Try the fresh squeezed juices, smoothies and liquados at brunch!
- We feature various WINES and BEER that are organic.
The LANDSCAPING that transformed our property was designed by David Kopfmann of Yardscapes. Visit them at Yardscapesinc.com. The METAL WORK inside and out was also a creation of David’s. The steel was all twisted and sculpted by hand.
The WOOD that is featured throughout the building is reclaimed wood from an old grain elevator from the North Shore of Lake Superior.
The old STONE outside the building is from the first St. Paul Courthouse that was torn down in the early 1930’s. The stone sat in a grave yard until the 90’s when Yardscapes bought it and started implementing it into its designs.
