Chef and co-owner of La Chaya Bistro, Juan has been in the restaurant business internationally for over 20 years. Being from Mexico where food is a large part of the culture, Juan has a huge appreciation for food and it's preparation. Only using the highest quality of ingredients (focusing on organic and locally farm raised), not rushing through the preparation and being meticulous with the presentation are all important steps of his process. The menu at La Chaya is an inspiration of Mexican foods and Italian as Juan also lived in southern Italy. |
